Cardamom Coffee Cake
Many people love to add coffee to their cakes as it gives it a unique flavor. On top of that, cardamom will make your cake so spectacularly delicious that you may very well not be able to stop making one of these cakes every week. This is where the cardamom coffee cake comes in. The deliciousness is highly dangerous: You have been warned!
Now, obviously cakes are highly customizable and you can easily figure out thousands of ways to make a cardamom coffee cake. This recipe is merely one of many recipes you could personally come up with in order to make your cake the greatest cake in the universe.

With that in mind, and with the excitement of making a great cardamom cake flowing through your veins, you are ready to receive the holy ingredients that will bring about the cakeness into your personal reality. (Note: cakeness is not a word).
I’m personally a vegan, so the ingredients are going to be vegan-friendly. Nevertheless, feel free to replace earth balance buttery spread with regular butter. You can also use regular milk instead of rice milk and eggs instead of bananas.
The ingredients are: 3 teaspoons of baking soda, 3 teaspoons of baking powder, 3 teaspoons of vanilla, 6 cups of flour, 4 bananas or 4 teaspoons of applesauce, 2 cups of earth balance buttery spread, a teaspoon of salt, 3 tablespoons of cardamom, 2 cups of Tofutti’s Sour Supreme and half a cup of rice milk.
You can use cinnamon and crushed pistachios for the topping.
Preheat the oven to 350 degrees F. Cream the sugar and earth balance buttery spread until everything is nice and fluffy. Blend the bananas and put in the salt, cardamom, vanilla and baking powder. Stir in the flour, the sour supreme and the rice milk. Make the topping and perform any finishing touches.
Let it bake for about 75 minutes. Once it’s ready, take out and let it cool down.
There you have it, a cardamom coffee cake. In essence, this is pretty much a normal coffee cake except you add cardamom to in the blending phase. You could try mixing in green cardamom and black cardamom at the same time, but you may find that it will have a more mixed taste. Pure green cardamom tends to be better for cakes like this.
You can also use some drops of lemon if you like, and again, remember that this is a vegan recipe and that you can make your own recipe using traditional cake ingredients like eggs, milk, sour cream, etc.
Making cakes can awaken the creativity within us. A cardamom cranberry coffee cake would be an interesting experiment, as would a cardamom pear coffee cake. The potential is limitless. You can also put some orange zest inside, but at some point there may be too many different flavors. No sacrifice is too great when you have the chance to use cardamom though. 😀
